Slimming World Recipe - My Slimming World Quiche

I love quiche, but sadly a pastry lined, cheese filled one is not ideal when trying to be good!

So I hunted around on various Slimming World forum pages and found a basic recipe. And after the addition of a few more ingredients I've come up with my very own recipe, which is SYN FREE ON EXTRA EASY IF USING CHEESE AS HEALTHY EXTRA A, so you can eat the whole blinking lot if you fancy it!

You will need:

Tin of new potatoes, large (cooked as per instructions on tin and allowed to cool)
4 Eggs
1/2 tub Quark (this is fat free soft cheese and can be found in the cheese aisle of most supermarkets)
Red onion, sliced 
Ham slices
Tomatoes, sliced
40g Reduced Fat Cheese, finely grated
Freshly ground black pepper, to taste

Preheat the oven to 200c

Spray an ovenproof dish with Fry Light.

Cut the cooled potatoes in half and layer onto the bottom of the dish.

In a jug, beat the eggs and add the quark, mixing until it reaches a smooth consistency. Season with a little black pepper.

Pour half of the egg mixture over the potatoes.

Add some of the onion to the top of the egg mixture.

Cover with ham slices.

Pour over the remaining egg mixture.

Cover with sliced tomatoes.

Cover tomatoes with grated cheese and a little more onion.

Cook in the preheated oven for 25-30 minutes or until set.


Ready for the oven.


This is lovely eaten warm (usually as I'm too impatient to wait) or cold. Keeps fine in the fridge for a couple of days.

It's perfect served with a lovely large salad and as part of a packed lunch or picnic.

A great alternative to the traditional quiche.
